minutesSriracha Bacon Bleu Cheese Breakfast Toasts are a light meal bursting with bold and spicy flavors. Fluffy scrambled eggs and spinach are piled on whole wheat toast and topped with a slice of bacon, bleu cheese crumbles and sriracha for a breakfast you won’t soon forget!
Ingredients
1 Clove Garlic, minced
6 2 Eggs
1/4 Cup Skim Milk
1 Cup Baby Spinach
3 Slices Whole grain Bread
1/4 Cup Bleu Cheese crumbles
2 Tbsp Sriracha
3 Slices Bacon
Salt and Pepper to taste
Directions
- In a large non-stick skillet, add the garlic, eggs, milk salt and pepper. Saute over medium-low heat, stirring constantly, for 4 minutes. Add the spinach and cook an additional 1-2 minutes, until the spinach is wilted.
- Top each slice of toast with a third of the egg mixture, bleu cheese, sriracha and bacon. Serve immediately.
