Sriracha Bacon Bleu Cheese Breakfast Toasts are a light meal bursting with bold and spicy flavors. Fluffy scrambled eggs and spinach are piled on whole wheat toast and topped with a slice of bacon, bleu cheese crumbles and sriracha for a breakfast you won’t soon forget!

Ingredients

  • 1 Clove Garlic, minced

  • 6 2 Eggs

  • 1/4 Cup Skim Milk

  • 1 Cup Baby Spinach

  • 3 Slices Whole grain Bread

  • 1/4 Cup Bleu Cheese crumbles

  • 2 Tbsp Sriracha

  • 3 Slices Bacon

  • Salt and Pepper to taste

Directions

  • In a large non-stick skillet, add the garlic, eggs, milk salt and pepper. Saute over medium-low heat, stirring constantly, for 4 minutes. Add the spinach and cook an additional 1-2 minutes, until the spinach is wilted.
  • Top each slice of toast with a third of the egg mixture, bleu cheese, sriracha and bacon. Serve immediately.
